The Story of Shux
Many many years ago there was a young man named William Shucking, a native of Pensacola. It is said that he had a small oyster shack near where the ball park is now. William was a fun loving soul who would harvest his own oysters and sit in his shack from early morning to the late hours of the night shucking oysters, sipping wine and other assorted beverages, while serving fresh oysters and drinks to the folks who would come by. He would tell stories about how his family was one of the first to live in Pensacola and how some day Pensacola would be the next New York City. It is also said that Andrew Jackson was one of his regular customers and after many visits dubbed young William “Shux”, as the boy never stopped shucking oysters. Needless to say the nickname stuck. And as his stories and his oysters became more and more loved by the people of Pensacola, his reputation grew and people would flock from all around the Gulf Coast to eat fresh shucked oysters, have a few beverages and listen to stories told by “Shux”. Every night before he closed he would tell people to remember “Happiness is not a destination, it is a way of life”. With his new found popularity, he decided to make his oyster shack into the first full service oyster bar on the Gulf and called it, of course, “Shux”.
